Job Summary

Owners ideally looking to work with the newly appointed Head chef from February to assist and support them with pre-opening set-up.

Pre-opening responsibilities: kitchen set up; menu development; sourcing suppliers, accounts set up; team recruitment & training; implementation of systems and procedures; local authority liaison


Menu planning – tastings, specs & costings

Daily kitchen and team management – directing and mentoring the team accordingly, ensuring consistently high standards of quality and service standards

Purchasing; kitchen admin and reporting; kitchen cost control; stock management & GP calculation; compliance files; maintenance of kitchen and equipment

Exciting, modern 75-cover Persian Restaurant Bar independent set to launch at a superb West End location later this April (2019).

Set over three floors and following significant investment, redesign and refurbishment – concept includes ground floor dining overlooking the open kitchen (new state-of-the-art equipment); a first floor dining room and bar plus basement prep-kitchen.

Food: modern, innovative cooking inspired by the Persian Gulf (flavour-profile focus) with commitment to sourcing the very best ingredients from artisan UK and International suppliers; all made in house on a daily basis; full menu development in collaboration with Owners.

7 day operation: set to open early to late with busy pre and post theatre trade expected.

Overall (kitchen / FOH) team of 35+

Required Education, Skills and Qualifications

Seeking a passionate, creative, seasoned Head chef preferably with a background in Middle Eastern / Persian cooking.

Essential: great ideas; good grasp of flavour profiles; experience creating new dishes and flavours.

Skill set: inspirational leader (people management); strong organisation & communication levels; good initiative / drive and attention to detail; proven track-record of delivering on budgets and KPI targets without compromise to quality and guest experience.


Start salary: £50,000 – £60,000+ basic pa plus KPI related bonus

Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance / sales dependent); courses as required; 28 days paid annual leave; workplace pension option; staff discounts; FAM trips & team excursions; laundered uniform & meals on duty

Approx. 50 – 55 hrs p wk / 7 shifts over 5 days incl. Weekends

Immediate Start available / able to accommodate notice
